Easy cake
Ingredients:
1 1/2 cups all purpose flour
1 1/2 cups sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 large eggs
2/3 cup extra virgin olive oil
2/3 cup orange juice
Zest of 1 large orange
2 tsp pure vanilla extract
Any flavourless oil for greasing
Garnish:
Powdered sugar
Rosemary sprig
1. Preheat oven to 350 F. Line the bottom of the cake pan with a round parchment paper, and grease the sides with flavourless oil. (Would highly recommended putting
parchment at the bottom for easy removal!)
2. Beat extra virgin olive oil, eggs, orange juice, orange zest, and vanilla extract until throughly combined.
3. In a separated bowl, combine the flour, sugar, baking
powder, baking soda, and salt. Mix these dry ingredients with the extra virgin olive oil mixture. Mix until just
well-combined; do not over mix.
4. Pour the cake batter into the pans. Bake for about 30-35 minutes, or until a toothpick inserted comes out
clean.
5. Once cooled, garnish with a generous dusting of
powdered sugar and a small sprig of rosemary.
